This warming roasted carrot soup is perfect for cold days, recovery moments, or when your body needs a gentle reset. With turmeric, coconut milk, and Glow25 collagen, it supports glowing skin, joint health, gut balance, and whole-body comfort, all in one creamy bowl.
Ingredients
- ~1 kg carrots
- 1 parsnip
- 2 tbsp extra virgin olive oil
- 2 tbsp coconut oil
- 2 tsp turmeric powder
- 1.5 tsp curry powder
- 1 large onion (diced)
- 1 large celery stalk (diced)
- 5 tbsp red lentils (rinsed)
- ¼ cup brown rice (rinsed)
- 6 cups filtered water or vegetable broth
- 2 tbsp soy sauce
- 1 can coconut milk
- 4 tbsp Glow25 collagen original powder
- Sea salt and pepper to taste
Instructions
- Preheat oven to 200°C (392°F).
- Clean and peel the carrots. Cut them into roughly 2.5 cm (1 inch) chunks and place in a large bowl.
- Toss with olive oil, salt, and pepper.
- Roast in the oven for 25 - 35 minutes, until the edges are slightly browned.
- Meanwhile, in a large pot, melt the coconut oil over low to medium heat.
- Add turmeric and curry powder. Let them simmer gently for 1 minute to bloom the spices.
- Add the diced onion and cook for about 10 minutes until softened.
- Stir in the diced celery and cook for another 5 minutes.
- Add the red lentils, brown rice, broth (or water), and soy sauce.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the roasted carrots and simmer another 10 minutes.
- Stir in the coconut milk and Glow collagen powder.
- Season with salt and pepper to taste.
- Let the soup cool for about 10 minutes, then blend with an immersion blender until smooth and creamy.
