Roasted Carrot Soup with Collagen

This warming roasted carrot soup is perfect for cold days, recovery moments, or when your body needs a gentle reset. With turmeric, coconut milk, and Glow25 collagen, it supports glowing skin, joint health, gut balance, and whole-body comfort, all in one creamy bowl.

Ingredients
  • ~1 kg carrots
  • 1 parsnip
  • 2 tbsp extra virgin olive oil
  • 2 tbsp coconut oil
  • 2 tsp turmeric powder
  • 1.5 tsp curry powder
  • 1 large onion (diced)
  • 1 large celery stalk (diced)
  • 5 tbsp red lentils (rinsed)
  • ¼ cup brown rice (rinsed)
  • 6 cups filtered water or vegetable broth
  • 2 tbsp soy sauce
  • 1 can coconut milk
  • 4 tbsp Glow25 collagen original powder
  • Sea salt and pepper to taste
Instructions
  • Preheat oven to 200°C (392°F).
  • Clean and peel the carrots. Cut them into roughly 2.5 cm (1 inch) chunks and place in a large bowl.
  • Toss with olive oil, salt, and pepper.
  • Roast in the oven for 25 - 35 minutes, until the edges are slightly browned.
  • Meanwhile, in a large pot, melt the coconut oil over low to medium heat.
  • Add turmeric and curry powder. Let them simmer gently for 1 minute to bloom the spices.
  • Add the diced onion and cook for about 10 minutes until softened.
  • Stir in the diced celery and cook for another 5 minutes.
  • Add the red lentils, brown rice, broth (or water), and soy sauce.
  • Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Add the roasted carrots and simmer another 10 minutes.
  • Stir in the coconut milk and Glow collagen powder.
  • Season with salt and pepper to taste.
  • Let the soup cool for about 10 minutes, then blend with an immersion blender until smooth and creamy.
