This zucchini collagen power bread is ideal for anyone looking for a nourishing, protein-rich alternative to regular bread. Ingredients
- 1 zucchini, grated
- ¼ cup unflavored protein powder
- ¼ cup psyllium husk
- Salt & pepper to taste
- ⅓ cup pumpkin seeds
- 4 tbsp Glow25 collagen original powder
- 6 egg whites
Instructions
- In a mixing bowl, combine the grated zucchini, protein powder, Glow collagen, psyllium husk, salt, pepper, and about 1 tbsp of the pumpkin seeds.
- In a separate bowl, whisk 6 egg whites until lightly frothy.
- Add the egg whites to the dry mix and stir until fully combined.
- Pour the mixture into a loaf pan and top with the remaining pumpkin seeds.
- Bake at 180°C (356°F) for approximately 20 minutes, until firm and golden.
