Ingredients
  • 1 zucchini, grated
  • ¼ cup unflavored protein powder
  • ¼ cup psyllium husk
  • Salt & pepper to taste
  • ⅓ cup pumpkin seeds
  • 4 tbsp Glow25 collagen original powder
  • 6 egg whites
Instructions
  1. In a mixing bowl, combine the grated zucchini, protein powder, Glow collagen, psyllium husk, salt, pepper, and about 1 tbsp of the pumpkin seeds.
  2. In a separate bowl, whisk 6 egg whites until lightly frothy.
  3. Add the egg whites to the dry mix and stir until fully combined.
  4. Pour the mixture into a loaf pan and top with the remaining pumpkin seeds.
  5. Bake at 180°C (356°F) for approximately 20 minutes, until firm and golden.
